Assyrtiko is produced in the vineyards of Parnassos, suggesting a special translation for this variety. The high altitude and the special terroir of the area give a fruity, high intensity wine.
Green color with intense aroma of lemon and lime. Notes of white flowers, cool acidity with a moderate aftertaste.
Winemaking / Aging
After the grapes are harvested, the method of pre-fermentation extraction is applied in an antioxidant environment in order to enhance the primary aromas and then the alcoholic fermentation of the juice at graduated temperatures not exceeding 16 ° C. Stay the wine for 2 months in its light wine lees with periodic stirring before bottling.
Terroir
The soil has a clayey texture and moderate slopes that give good drainage. The microclimate of the area is characterized by abundant rains and snowfalls in winter and mild and cool summers.
Central Greece. The international variety Chardonnay and the Greek one Assyrtiko are cultivated in the vineyards of Lefkes and Anamero, respectively, in the viticultural zone of Parnassus at an altitude of 400-450 meters.
It is perfectly combined with Mediterranean dishes comprising of seafood appetizers or poultry and smoked cheeses.
Served at 8-10ºC.
