Another world-famous variety is cultivated on Mount Parnassos and gives rich and full body wines. An important role in the creation of quality wines is played by the great attention given to the vineyard from pruning to harvest. The vinification scheme is the classic one for red varieties accompanied by twelve months of aging in French oak barrels.

 

Winemaking / Aging

After the grapes are harvested, they are carefully thawed, then exploded in the absence of a press and the grape pulp is taken to the fermentation tank.  In the middle of the fermentation, 50% of the grape mass is bleeding where it is transferred to a separate tank and fermented at high temperatures and the remaining 50% fermented separately at lower temperatures to 20-22 ° potential of the variety.  After the end of the fermentation follows millet fermentation in stainless steel tanks and at the end of this maturation takes place in French oak barrels of 225 liters.

Terroir

The soil is clayey with a moderate soil slope.

Argyriou Merlot

Central Greece. The international variety Chardonnay and the Greek one Assyrtiko are cultivated in the vineyards of Lefkes and Anamero, respectively, in the viticultural zone of Parnassus at an altitude of 400-450 meters.

Beef Stew

It is perfectly combined with Mediterranean dishes comprising of seafood appetizers or poultry and smoked cheeses.

 

Served at 8-10ºC.
